ddiskit.spec: change the date changelog date to today's date

Apparently, koji generates Release for SRPM and binary RPM differently,
which results in build failure with diagnostics "GenericError: Unable
to complete build: release mismatch (build: 27.20250115git710308d.el10,
rpm: 27.20250113git710308d.el10)"

Resolves: RHEL-61716
