...
fedora-livecd-desktop.ks includes fedora-live-desktop.ks and
fedora-live-minimization.ks and so sym links for those need to be
added in custom as well, for things to work.

Java should really be installed dynamically via browser/PackageKit
as needed.
simple-scan is really small, so bring that back in.
